Vegan Stuffed Pasta Shells

Vegan Stuffed Shells

  • 16 jumbo shells
  • 1/2 box tofu
  • 1 1/2 cups cashews
  • 1/4 cup water
  • 2 tbsp vinegar
  • 2 tbsp lemon juice
  • 2 cloves garlic
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp rosemary
  • salt to taste

Instructions

  • Cook Pasta shells for 10 minutes (al dente).
  • Preheat oven to 350 degrees.
  • Mix together tofu, cashews, water, vinegar, lemon, garlic, onion and salt to taste while shells drain well and cool off.
  • Slather marinara sauce to baking dish.
  • Add 1 tbsp of mixture into each shell
  • Drizzle olive oil over stuffed shells and top each shell with marinara sauce.
  • Cook for 25 mins; When 2 minutes are left add sweet bell peppers & pumpkin seeds into each shell.
  • Remove and serve.
